Gluten is a protein found in grains, notably wheat, rye and barley. Gluten intolerance may affect up to 15% of the world’s population.1 It occurs when there is a difficulty in breaking down specific amino acid chains (called peptides) in the gluten protein. The main approach to dealing with gluten or casein intolerance has been to remove offending foods from a person’s diet, also known as the GFCF (gluten-free, casein-free) diet. Recommended Usage
